Ground Turkey, Ginger and Garlic Bok Choy Stir-Fry

Ingredients

• 1 lb of ground turkey

• 5 bok choy stems from bunch

• 2 cloves of garlic, minced

• 1 teaspoon fresh ginger, grated

• 2 Tbsp. coconut oil

• Salt to taste

Directions

1. Add 1 tablespoon of coconut oil into a saucepan (or wok) on a medium heat, then add ground turkey. Stir frequently until the turkey turns brown. Remove from pan and set aside in bowl.

2. Cut off the ends of the bok choy. Then chop the bok choy into 1-inch long chunks.

3. Add 1 tablespoon of coconut oil into the same saucepan (or wok) on a medium heat, and then add in the bok choy chunks. Stir frequently while the bok choy cooks.

4. After the bok choy starts to wilt, mix in the cooked ground turkey, garlic, ginger, and salt to taste.

5. Cook for another 1-2 minutes and serve.
