Bok Choy Spring Soup with Poached Egg

Ingredients:

32 ounces vegetable broth

2 eggs

1 head Bok Choy, chopped

Salt, to taste

 

Instructions:  

  1. First bring the vegetable broth to a boil and reduce the heat.  
  2. Poach the eggs for 5 minutes in the broth and remove them into 2 bowls.  
  3. Now stir in Bok Choy into the broth and cook for 4 minutes.  
  4. Then dish out in a bowl and serve hot.
