Ingredients:

  • 2 avocados, peeled, pitted and roughly chopped 
  • 1 tablespoon sun-dried tomatoes, chopped 
  • 2 tablespoons lemon juice 
  • 3 tablespoons cherry tomatoes, chopped 
  • ¼ cup red onion, chopped 
  • 1 teaspoon oregano, dried 
  • 2 tablespoons parsley, chopped 
  • 4 kalamata olives, pitted and chopped 
  • A pinch of salt and black pepper

Instructions:  

  1. Positioned the avocados in a bowl and mash with a fork.
